TGIS! Thank God its Sunday cause that means that I get to cook Sunday dinner for the week. WOOHOO! I’ve been off my cookin game since my fridge broke down and I had to get a replacement. So today’s meal is not only gonna be amazing but its also commemorating me gettin back in the kitchen and makin the food that not only taste good but feels good. Last week I made my version of pico de gallo and today I will be making non-dairy garlic mashed potatoes (lactose and tolerant) as well as Broccoli Beef with Bok Choy! I’m so excited for this dish since I’ve always loved Broccoli beef from a young age and now I get to have it with Bok Choy another great vegetable. Garlic mashed potatoes speaks for itself. I also have a special treat to accompany this week’s meal. Thanks to my friend Alex who is also a food master for donating a strawberry rhubarb pie to this week’s meal. Normally I don’t really have a sweet tooth but I will make exception this week since its homemade from a friend. Its pretty hard to turn that down! TGIS!
